The Ayam Cemani

Wicked cool & intelligent

History

The TRUE Ayam Cemani (pronounced I-am-chee-mon-e) originates from the Indonesian island of Java. This breed possesses a characteristic called fibromelanism, in addition to several other dermal and plumage melanizers, giving them their exotic look. Ayam Cemanis are believed to bring health, good luck, and fertility to their people in Indonesia, and are a treasured breed.

Let The Buyer Beware (Caveat Emptor)!

There are VERY FEW quality specimens of Ayam Cemani in the United States. Almost all of the Ayam Cemani in the US arrived here via Europe, where the breed purity was compromised through efforts to increase egg production. Indonesia has banned exportation of chickens from their country, and even if that ban was lifted, the USDA bans importation of chickens from Indonesia due to the risk of highly pathogenic Avian Influenza (HPAI) from that country.

We began our Ayam Cemani journey in 2023 with a cockerel named Chaos. Like so many Ayam Cemani, Chaos matured to be a poor representative of his breed. We took a step back, and bought Chaos' sire, only to find flaws in his color genetics that weren't apparent on the surface. In 2024, we brought in a cockerel from Bissonnette Acres in Arkansas. From that cockerel and two foundation hens from our original stock, we began to build our own line. In 2025, we raised several more Ayam Cemani from Bissonnette Acres and selected a second cockerel to create a second string of breeding birds. As of spring of 2026, we are working on our 5th generation overall.

 

All birds entering our breeding program complete strategic test breeding to determine if they carry recessive alleles (eb or e+) at the E locus. This test breeding also checks homozygosity for fibromelanosis (Fm). Many of the birds in our breeding program have had these results doubly confirmed via DNA testing in addition to test breeding. Once a bird has proven to be breeding sound in these two areas and are only paired with mates meeting the same criteria, the offspring meet that criteria by default and further testing becomes unnecessary.

We do work with some birds that are heterozygous at the E locus but possess other qualities we wish to promote in our breeding program. We do not offer these to the public. All offspring of those heterozygous birds - IF they meet the standard for phenotype - must go through the test breeding process to determine whether they received the recessive alleles or not from their heterozygous parent. The goal of our breeding program is to eliminate the recessive E locus alleles, but not at the expense of proper type along the way. Knowing the problem and how to solve for it, is a powerful tool if managed correctly. 

 

We are offering a limited number of chicks from our genetically proven lines to the public for 2026. We do not offer hatching eggs. The majority of what we will be producing will be retained, grown out, and evaluated for participation in the final qualifying meet for APA acceptance in Columbus, Ohio in November.

The Ayam Cemani Breeders Association is in the pursuit of breed acceptance by the American Poultry Association. The Ayam Cemani Standard of Perfection (SOP) is available for review at the ACBA website. We encourage anyone that is interested in this breed to familiarize themselves with the qualities called for in the standard.
